Foodie Fridays: Banana Chocolate Chip Bread

Who's ready for Fall?
I know I am!
And Fall puts me in the mood for baking.
I had a pretty easy going week so
today I decided to make some yummy
bread.
I gathered up my ingredients





and got to work
It's really very simple
and after a little mixing
you simply pour into your baking
pan and shove it into the oven


for 40-50 minutes and wait and watch
as your kids wander in and out of the kitchen
following their noses and that heavenly smell
of freshly baked bread and bananas and chocolate
at the end you get this


Now excuse me while I eat my slice. YUM!

BANANA- CHOCOLATE CHIP BREAD


1/2 cup margarine, at room temperature (1 stick)


1 ¼ cups sugar


1 tsp baking soda


1/4 cup mayonnaise


2 large eggs


1 cup mashed ripe bananas (about 2 medium)


1 tsp vanilla extract


6 ounces chocolate chips


1 ½ cups all-purpose flour


1. Preheat oven to 350 degrees F. Grease and flour one 8×5-inch loaf pan.


2. In large bowl, cream margarine and sugar together with an electric mixer. Add baking soda, mayo, eggs, bananas and vanilla. Blend well. Stir in flour and chocolate chips, just until combined.


3. Pour batter into loaf pan and bake 40-50 minutes, or until toothpick inserted into the center comes out clean and dry. You want the outer crust to be a little crusty and a little crunchy while the inner bread is moist but not mushy. So when testing with your toothpick make sure it doesn't come out wet.


Yield: One loaf
