YUMMY APPLE EMPANADAS




Lately I have been baking a lot of these yummy empanadas stuffed with apple!




My family and my coworkers clamor for them. So here is the recipe, so you too can bake some of these yummy delicacies at home:

Ingredients:
4 apples peeled and cored ( I use 2 apples)
1 tbsp. cornstarch
1 tsp cinnamon (I use more :D)
1/4 cup sugar, 1/4 cup brown sugar
1 tbsp butter
1 package refrigerated pie dough
1 egg beaten and set aside
1 brush
1 Tupperware empanada maker (this is SO helpful, I don't think they sell them anymore but you may be able to find it on ebay)
Extra sugar and cinnamon in a little pinch bowl to sprinkle on empanadas

Wash, peel and slice apples. Put them into food processor or chopper along with

sugar,cornstarch and cinnamon. Chop until coarsely chopped. Melt butter over medium heat then lower heat and add the mixture. Cook until soft. Allow to cool slightly. In the meantime, you should have the pie dough on the counter to warm up to slight room temp (you don't want the dough too soft).
I roll mine out one circle at a time on my Pampered Chef Baking Stone b/c it is naturally non stick. I then use the bottom of my empanada maker to cut a circle. Then I put this piece of pie dough on the top with the grooves in and fill with about 1 tablespoon of the apple mixture.

I press tight and lightly brush it with some of the beaten egg.I then open the empanada maker and brush one side with some egg. I plop it down on a cookie sheet lined with parchment paper. I sprinkle some of the cinnamon/sugar mixture all over the parchment paper and put the empanada on it. I then brush some more egg on the other side and sprinkle again with cinn/sugar mix.Keep doing this until you use up all the dough. I usually get about 8 empanadas using this gizmo but you can use a plate or a large cup or bowl to cut out the circles. This tupperware thingy just makes it a snap!
Bake 12-15 mins. or until golden brown at 375 degrees.

Let cool and enjoy with a top of cool whip or eat cold the next day :)
(my kids swear they are better after a day or so) Healthy (I think) and yummy too!!

  2. Oh, those look SO good! I just love apple empanadas! Once in a while, I get one from Taco Bell, but yours look WAY better! They look so professionally done, too! I will definitely be trying your recipe out, thank you so much for sharing it. :)
