YUMMY APPLE EMPANADAS

Lately I have been baking a lot of these yummy empanadas stuffed with apple! My family and my coworkers clamor for them. So here is the recipe, so you too can bake some of these yummy delicacies at home: Ingredients: 4 apples peeled and cored ( I use 2 apples) 1 tbsp. cornstarch 1 tsp cinnamon (I use more :D) 1/4 cup sugar, 1/4 cup brown sugar 1 tbsp butter 1 package refrigerated pie dough 1 egg beaten and set aside 1 brush 1 Tupperware empanada maker (this is SO helpful, I don't think they sell them anymore but you may be able to find it on ebay) Extra sugar and cinnamon in a little pinch bowl to sprinkle on empanadas Wash, peel and slice apples. Put them into food processor or chopper along with sugar,cornstarch and cinnamon. Chop until coarsely chopped. Melt butter over medium heat then lower heat and add the mixture. Cook until soft. I don't like the new TVs

For some reason I am really starting to dislike these new rectangular shaped TVs. You know the ones we have been FORCED to buy! I prefer the old fashioned squared ones. I am down to one of those in my house. My last one, a big screen one from the late 90's just went kapoot ((sniff, sniff)) and it would cost too much to replace the part that blew up. :( So we are looking to replace it with another big screen tv, but we have to choose one of the flat panel ones that I so dislike. Why the hard feelings you ask? Well with the old fashioned ones the picture fit in neatly, it wasn't s-t-r-e-t-c-h-e-d out like this and the stupid black bars on top and bottom that some shows and DVDs come with make the picture even teenier. So there I said it I HATE THE NEW TV'S!!!!!! JUST CALL ME AN OLD FASHIONED RETRO SQUARE KIND OF GIRL .

Life in Picures, Pictures of Life

I love looking at pictures: pictures of flowers, pictures of fruits, pictures of far away lands, pictures of people. Crazy parents and school zones!

I am always amazed at the stories Sergio tells me about picking up Aaron at school. Like for instance the day he pulled over near the park, way before school and waited until it was almost time to get in the carpool line to pick him up. Well a woman kept honking her horn at him wanting him to move. He motioned for her to go around, since he was parked! Not blocking anyone, etc. Well this woman proceeded to leave her SUV running and came and knocked on Sergio's window. Since the window doesn't work, he opened the door. The lady (if you can call her that) got right in his face and screamed obscenities at him and wanted him to move. He explained to her that it was not school zone time yet and he could be parked there if he wanted to. He then proceeded to tell this woman it was not safe for her to come up to a parked pickup with a man in it and yell! She didn't care and continued to cuss him out. Sergio finally lost it and told her to shut the (*K% up!! Then today, he said that

New Year New LOOK

and outlook in my life! Towards the end of the year, I decided to highlight my hair and cut it. I have been wanting to do this for a very long time but I didn't have the time or the money to do it. Thanks to some Christmas money I was able to afford it :) New years' eve was kind of quiet but fun. We had Ellison's boyfriend, Parke over and we had some appetizers and hot wings. My mom and grandma were here too. At midnight we all drank sparkling apple cider and toasted to a new outlook on life. In with the new!! I have been going thru some personal trials lately. After much personal prayer and personal revelations Sergio and I will be taking a more proactive approach to his business. We are thankful that the Lord has blessed us with so much. We are thankful that HE has blessed us with good children. You don't know how good you have it until you find others that are MUCH worse off than you.
