Lately I have been baking a lot of these yummy empanadas stuffed with apple!

My family and my coworkers clamor for them. So here is the recipe, so you too can bake some of these yummy delicacies at home:

4 apples peeled and cored ( I use 2 apples)
1 tbsp. cornstarch
1 tsp cinnamon (I use more :D)
1/4 cup sugar, 1/4 cup brown sugar
1 tbsp butter
1 package refrigerated pie dough
1 egg beaten and set aside
1 brush
1 Tupperware empanada maker (this is SO helpful, I don't think they sell them anymore but you may be able to find it on ebay)
Extra sugar and cinnamon in a little pinch bowl to sprinkle on empanadas

Wash, peel and slice apples. Put them into food processor or chopper along with

sugar,cornstarch and cinnamon. Chop until coarsely chopped. Melt butter over medium heat then lower heat and add the mixture. Cook until soft. Allow to cool slightly. In the meantime, you should have the pie dough on the counter to warm up to slight room temp (you don't want the dough too soft).
I roll mine out one circle at a time on my Pampered Chef Baking Stone b/c it is naturally non stick. I then use the bottom of my empanada maker to cut a circle. Then I put this piece of pie dough on the top with the grooves in and fill with about 1 tablespoon of the apple mixture.

I press tight and lightly brush it with some of the beaten egg.I then open the empanada maker and brush one side with some egg. I plop it down on a cookie sheet lined with parchment paper. I sprinkle some of the cinnamon/sugar mixture all over the parchment paper and put the empanada on it. I then brush some more egg on the other side and sprinkle again with cinn/sugar mix.Keep doing this until you use up all the dough. I usually get about 8 empanadas using this gizmo but you can use a plate or a large cup or bowl to cut out the circles. This tupperware thingy just makes it a snap!
Bake 12-15 mins. or until golden brown at 375 degrees.

Let cool and enjoy with a top of cool whip or eat cold the next day :)
(my kids swear they are better after a day or so) Healthy (I think) and yummy too!!

I don't like the new TVs

For some reason I am really starting to dislike these new rectangular shaped TVs. You know the ones we have been FORCED to buy! I prefer the old fashioned squared ones. I am down to one of those in my house. My last one, a big screen one from the late 90's just went kapoot ((sniff, sniff)) and it would cost too much to replace the part that blew up. :( So we are looking to replace it with another big screen tv, but we have to choose one of the flat panel ones that I so dislike. Why the hard feelings you ask? Well with the old fashioned ones the picture fit in neatly, it wasn't s-t-r-e-t-c-h-e-d out like this and the stupid black bars on top and bottom that some shows and DVDs come with make the picture even teenier.

So there I said it I HATE THE NEW TV'S!!!!!!

Life in Picures, Pictures of Life

This is an etsy shop from Sara Norris Photography and I have to say I LOVE her pics! I especially like the one of the Ferris Wheel. My son Aaron loves ferris wheels and this would look great hung up in his room! She is having a gift certificate give away for $50 if you check out her site and then blog about it! I checked it out and I am seriously considering buying those ferris wheel prints....but I'd rather get them for free ;)

Crazy parents and school zones!

I am always amazed at the stories Sergio tells me about picking up Aaron at school.

Like for instance the day he pulled over near the park, way before school and waited until it was almost time to get in the carpool line to pick him up. Well a woman kept honking her horn at him wanting him to move. He motioned for her to go around, since he was parked! Not blocking anyone, etc. Well this woman proceeded to leave her SUV running and came and knocked on Sergio's window. Since the window doesn't work, he opened the door. The lady (if you can call her that) got right in his face and screamed obscenities at him and wanted him to move. He explained to her that it was not school zone time yet and he could be parked there if he wanted to. He then proceeded to tell this woman it was not safe for her to come up to a parked pickup with a man in it and yell! She didn't care and continued to cuss him out. Sergio finally lost it and told her to shut the (*K% up!!

Then today, he said that a woman kept honking at him to move when he was in the carpool lane. Since it was raining there is a SYSTEM the school uses to make sure the line moves smoothly but she insisted upon getting out of her vehicle and getting her child. Even the school principal was motioning to this woman to get BACK IN HER CAR!! She gave Sergio the finger and sped around him and got out of her car anyway!

Earlier Sergio told me that while he was going down the street to the school a school bus pulled in front of him carrying the middle schoolers. It started flashing its lights and the driver was getting ready to pull out that little stop sign on the side of the bus. Well this crazy guy kept honking his horn at Sergio, to MOVE and GO! Sergio proceeded to stop as per the sign on the bus. Well this nut, leaves his car running and comes up to the window and yells at Sergio to "Move it MAN"! Sergio points to the flashing light and tells him "We're supposed to stop MORON!!" Then the guy said "Oh, .......yeah".

But at the same time another woman sped right past the school bus (going the other direction) oblivious to the fact that IN THE DRIVER'S LICENSE MANUAL IT SAYS BOTH LANES HAVE TO STOP FOR CHILDREN LOADING AND UNLOADING!

His stories never cease to amaze me. These parents GO CRAZY picking up their kids. Sheesh have some patience people.

New Year New LOOK

and outlook in my life! Towards the end of the year, I decided to highlight my hair and cut it. I have been wanting to do this for a very long time but I didn't have the time or the money to do it. Thanks to some Christmas money I was able to afford it :) New years' eve was kind of quiet but fun. We had Ellison's boyfriend, Parke over and we had some appetizers and hot wings. My mom and grandma were here too. At midnight we all drank sparkling apple cider and toasted to a new outlook on life.

In with the new!! I have been going thru some personal trials lately. After much personal prayer and personal revelations Sergio and I will be taking a more proactive approach to his business. We are thankful that the Lord has blessed us with so much. We are thankful that HE has blessed us with good children. You don't know how good you have it until you find others that are MUCH worse off than you. Then you feel like you are the luckiest person out there.
I will continue to workout ( I am looking into pole dancing classes next HA) and eat right and we are all committed to be healthy in the Martinez household. Once the weather warms up again, we will all go out for our bike rides just like we used to in our old neighborhood.
My grandmother left for home on the 1st and I got to take all the decorations down.
Sergio drove down to drop off my grandma and to see his parents. It was a much needed trip for him. He takes good care of the kids and me :) while he is here and I told him he should have some alone time.
Meanwhile, I took the kids to see the Princess and the Frog. It was such a good movie I want to see it again!
Work has been very busy at this time of the year with audit and what not.
I have decided to start a new venture. In the past I have always enjoyed sales and meeting new people. I love baking and need to learn to cook more dishes so I have started a Pampered Chef business.
My grand opening is on the 23rd. I am so excited. I put myself through college selling cosmetics thru a home party plan called Jafra and I absolutely loved it!
I also want to have Ellison with me so she can learn sales and marketing. I tell you, doing sales boosted up my self esteem and taught me how to deal with negative people, how to handle objections and of course how to close a sale!
I hope to do well with Pampered Chef. I love their products and they are good quality and quite affordable.
So I am excited about 2010....are you??
