Puerto Rico Vacation

Puerto Rico Family Vacation So many things have transpired since I last blogged here, but I'll share all that with you all in the next post.  This post is all about our amazing trip to San Juan and Rincon, Puerto Rico. I had been on the fence about where to go for our family vacation, thinking that going to Isla Mujeres in Mexico would be a great idea, then figuring it would take too long to get our passports in time for our trip, we finally decided on Puerto Rico! It is a short 5 hour flight from DFW and we could only find non-stop flights on Frontier. I was a bit leery of booking our flights with Frontier since I've heard horror stories, but we bit the bullet and booked the flights. I gotta say, the entire process was seamless! No issues whatsoever. I had plenty of leg room, we paid extra to board first and choose our seats. We did check a bag and we had no problems with that either. I guess it pays off to read and re-read all their website to make sure we check in on the app...

EZ Chicken Parmigiana

EZ Chicken Parmigiana So we all know I'm not Italian lol However, I love Italian food. I mean, who doesn't, right? I haven't been much of a cook in the past, more of a baker, but I want to expand my horizons. I saw a really good recipe for this Chicken Parmesan a few years ago and I have adapted it to my taste Since we are empty nesters, I now cook for two on a regular basis. And by regular basis, maybe once a week HA! Adjust the recipe as you see fit. You will need  2 boneless chicken breasts about a cup of breadcrumbs one jar of your favorite marinara sauce 24 oz. ( I prefer this one)  Bertolli's a cup of grated parmesan 4 slices of swiss cheese foil butter or olive oil baking pan Preheat oven to 450 degrees Pour 1/2 jar of marinara sauce into shallow bowl and stir in the grated Parmesan and breadcrumbs. Super Easy Fall Wreath (Pottery Barn Knockoff)

Hello friends, I hope you are starting to cool off wherever you live. Here in Texas, it's still super hot. Nevertheless, it is now September and by golly I am going to MAKE it feel like FALL, at least inside.  Now, being a full time working woman, I rarely have time to craft anymore, but lately I've been feeling inspired.  I was on the Pottery Barn website and I spotted this super cute wreath. But then I saw the price! Yikes! This gorgeous wreath is about $149 and you can find it here  if you want to spend that kind of money. I wanted to recreate it. Date Night-French Cooking Class

Date Night-French Cooking Class Happy weekend everyone! We were busy kicking off my birthday weekend! Woohoo!! And even though I am getting older, I like to go out and celebrate in style! My husband and I made a promise to go out every month and try out fun things together.  Last month, we went to a Murder Mystery Theatre Dinner. I'll tell  you guys about that at a later time.  Yesterday we went to a French cooking class in Dallas at Sur La Table.  The meal we prepared was ratatouille, a French torte and a raspberry souffle. As part of the class, you receive a 10% discount on any purchase.  You can bet I took advantage of that :) Anywho, both  my husband and I were impressed with the layout of the kitchen, the chef and the meal itself.  You can BYOB (we forgot :/) and you will work in a team of 4.  However, our table only had the two of us as the other pair cancelled at the last minute.  The chef explains everything step by step and underneat...

Weekend Spring Trip-Galveston, Texas

It's been a minute! But I am back. So much has happened in my life from the last blog post.  I have to tell you guys all about my move to my small cottage home, my journey from living a life in an unhappy marriage, the dating scene and finally finding love.  But for now, here is what happened on my impromptu weekend trip.  I needed to get away really bad. From working WAY too much at my new job (that I landed during COVID) to the regular stresses of being a working mom to a high school senior (how did THAT happen?!) You guys, I NEEDED this trip!  So I booked my hotel on the Hilton Honors app because I am a member :) then we decided to head out early on a Friday morning.
