EZ Chicken Parmigiana

EZ Chicken Parmigiana

So we all know I'm not Italian lol
However, I love Italian food. I mean, who doesn't, right?
I haven't been much of a cook in the past, more of a baker, but I want to expand my horizons.
I saw a really good recipe for this Chicken Parmesan a few years ago and I have adapted it to my taste
Since we are empty nesters, I now cook for two on a regular basis. And by regular basis, maybe once a week HA!
Adjust the recipe as you see fit.

You will need
2 boneless chicken breasts
about a cup of breadcrumbs
one jar of your favorite marinara sauce 24 oz.
( I prefer this one)
a cup of grated parmesan
4 slices of swiss cheese
foil
butter or olive oil
baking pan
Preheat oven to 450 degrees

Pour 1/2 jar of marinara sauce into shallow bowl and stir in the grated Parmesan and breadcrumbs. Mix thoroughly.
Cut chicken breasts (butterfly) in half to make them thinner. Coat chicken breasts with olive oil or melted butter. Dip chicken breasts into marinara mixture. Line a baking pan with aluminum foil. Place chicken breasts in pan. Place two Swiss cheese slices on each chicken breasts to cover them. Next spoon leftover marinara sauce over chicken. Cover lightly with foil. Bake at 450 degrees for 25-30 minutes or until done (temp it)
Serve with a salad, pasta or green beans. Enjoy!

I found the Cheesecake Factory's specialty bread at my local Kroger and I had to buy a loaf. It's what you see in my photo. Warmed up with some melted butter.
Mmmmmm.

Super easy and you control the portions, so very healthy.

Until next time amigos!!
