Tasty Zucchini Cakes

 A couple of nights ago I saw a recipe in a magazine for these little zucchini cakes and I thought WOW I want to make those!!  I decided to go get me the cornbread mix so I could make those tonight.

I decided to modify the recipe and they came out spectacular!! These are SO yummy and tasty and you can modify them by adding or taking out some of the ingredients.





You will need:
1 bag of cornbread mix
1 zucchini
chopped onion (optional and according to your taste)
cilantro (optional and to your taste)
Margarine
Salt to taste

First preprare the cornbread mix according to instructions on package.
Wash and grate zucchini. Add it to the cornbread mix and stir. Add in the onions and cilantro if desired (these make it even tastier!) Add in a dash of Habanero powder if you want. We like our food with some ZING!! Now add salt to taste.

Melt about 1 tablespoon of margarine on the skillet like if you are going to make pancakes. Pour the mixture to make them the size of small pancakes or about 5 inches in diameter. Cook them like you would a pancake about 2 minutes each side or until light golden brown. Serve warm.
They are delicious!! And even my kid who hates vegetables, couldn't get enough of these little zucchini cakes. It was fun modifying and perfecting this recipe for our family by adding some "heat" to it :)
